Canterbury Lamb
Lamb from the Canterbury region of New Zealand, located in the central-eastern part of the South Island.
Canterbury is a prime place for rearing lamb, thanks to its rich, river-drained soils and mild climate with plenty of sunshine.
Air-flown straight from the lush green pastures of New Zealand to you.
Lamb Rack
Lamb rack is the rib end of the loin, consisting of several ribs together, with the backbone removed for easy carving between ribs.
It is one of the most tender parts of the lamb and is excellent for grilling, roasting, or preparing as tandoori lamb rack.
Cooking & Preparation
Lamb rack is a tender and lean cut that only needs brief cooking. Season with salt, black pepper, and rosemary before roasting or barbecuing.
Best served rare or medium-rare, as overcooking may cause the lean meat to become dry.
