Canterbury Lamb
Lamb from the Canterbury region of New Zealand, located in the central-eastern part of the South Island. Canterbury is a prime place for rearing lamb, thanks to its rich, river-drained soils and mild climate with plenty of sunshine.
This allows grass to grow all year round, so flocks are free to graze throughout the year. The animals are happy, healthy, and produce some of the best-tasting meat in the world.
Apart from its full flavour and fine texture, Canterbury Lamb is also a good source of iron, protein, B vitamins, essential minerals, and zinc.

Lamb Shank
Lamb shank is the lower part of the leg with the bone in. It is a lean cut with rich flavour and becomes tender, juicy, and fall-off-the-bone delicious when cooked slowly.
It contains a higher proportion of connective tissue and bone, making it perfect for braising, stewing, or simmering.
Cooking & Preparation
Best cooked covered and slow-braised or stewed. It may also be simmered until the meat becomes tender.
